1 box Lemon Cake Mix
1 (3.9 oz.) pkg. Instant Lemon Pudding Mix
1 cup Sour Cream
1 cup Olive Oil
4 Large Eggs
½ cup Water
Makes 24 cupcakes.
Preheat the oven to 350 degrees.
Line 24 cupcake pans with fun liners!
With your Kitchenaid or hand mixer, combine cake mix, instant pudding mix, sour cream, olive oil, eggs and water into a large mixing bowl.
**The liquid can get splashy so I like to mix the oil and water to the mix very slowly.
Beat until mixed together well (you may need to hand mix the bottom if the Kitchenaid paddle doesn't hit the bottom of the bowl.
Spoon or pipe the batter in the prepared cupcake pans. Bake at 350 degrees for 13-15 minutes. A toothpick should come out clean. Cool the cake completely before icing.
You can also make this into a Bundt Cake - seen in the picture!
